Super Quick Pumpkin Spice Oatmeal
Five minutes is all you need to create a warm, yummy, and hearty breakfast for one. Five minutes and my favorite pumpkin cooking hack: pumpkin butter. With pumpkin, just the right autumn spices, and a touch of sugar, pumpkin butter makes a great mix in to instantly add flavor in one quick step.
Heat the water in an electric tea kettle (super fast) or microwave while you combine the ingredients so it’s ready for you...and it won’t slow you down.
Salt may seem unnecessary to you, but plain oats and nuts are sodium-free. The Trader Joe’s Pumpkin Butter we use also have zero sodium. Just the slightest pinch of salt will elevate this oatmeal!
This recipe is for one, but you can easily get out more bowls, line them up, and repeat for as many as you might need.
Super Quick Pumpkin Spice Oatmeal
About ½ cup oats (quick or rolled are fine; just not steel cut)
2-3 tablespoons chopped walnuts (or the nut or dried fruit of your choice)
1 heaping tablespoon pumpkin butter
Tiny pinch of salt
Sprinkle of cinnamon (optional)
Boil about 1 cup of water or more. Do this first so it will be ready for you when your oats are mixed.
Place the oats, walnuts, and pumpkin butter in a bowl. Add boiling water until you see it cover part of the oats. Stir well. Cover and let sit 1-2 minutes.
Stir again. Add a tiny pinch of salt and sprinkle of cinnamon, if using.
Serves 1, but can easily be duplicated in multiple bowls.
