Slow Cooker Mojo Lime Pork
Tart lime and zesty spices combine to flavor pork shoulder in this slow cooker recipe. Perfect to use in sandwiches, tacos, or on its own, it is super tasty and a family favorite.
Slow Cooker Mojo Lime Pork
1 - 4-5 pound boneless shoulder pork roast (bone-in* is fine, but then it will weigh more)
1 large onion, peeled and quartered
2 limes, zested and juiced
2 teaspoons dried oregano
½ teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon red pepper flakes
½ teaspoon ground pepper
2-3 bay leaves
½ cup water
Place the pork and onion in the slow cooker. Add the lime zest and lime juice. (Zest the lime before you juice it--trust me on this!). Add the herbs and spices (oregano through bay leaves). Pour the water over top.
Cook on low for 8-12 hours.
Remove bay leaves and onions. Shredded pork with two forks.
You may serve immediately or brown some in a pan for tasty browned bits.
Serves 8-12.
*A bone-in roast should be cooked on high.
