Citrus-y Crispy Brussels Sprouts
12-16oz fresh Brussels Sprouts, cut in half
A couple tablespoons extra virgin olive oil
½ teaspoon salt
1 teaspoon pepper, divided use
Juice of one large lemon
2 tablespoons honey
A bit of fresh mint or parsley
Preheat oven to 425 degrees.
Place the cut Brussels Sprouts on a sheetpan lined with parchment or a silicone liner. Drizzle with olive oil, salt and ½ teaspoon pepper. Roast for 20-30 minutes or until there is good browning on the sprouts.
While the Brussels Sprouts are roasting, mix the lemon, honey, fresh mint or parsley, and additional ½ teaspoon pepper.
Remove the Brussels Sprouts from the oven and drizzle with the lemon sauce. Serve immediately.
Serves 4-6 as a side.
