BBQ Chicken Meatloaf (GF/DF)
Gluten Free, Dairy Free and SO easy!
BBQ Chicken Meatloaf
2 pounds ground chicken
2 tablespoons minced dried onion
2 teaspoons dried parsley
⅔ cup almond flour
2 eggs, beaten
1 teaspoon smoked paprika
1 teaspoon seasoned salt
¼ teaspoon red pepper
3 tablespoons BBQ sauce
Preheat oven to 350 degrees.
In a large bowl, combine all ingredients, mixing very well to incorporate all the ingredients evenly throughout the chicken mixture.
Spray either two standard loaf pans or four mini pans with cooking spray and add the mixture.
Cook for 20-40 minutes, depending on the size of your pan (larger pans will take longer) or until the internal temperature reaches 165 degrees.
Let cool for 5 minutes before slicing.
Serves 6-8.
