The Best White Chocolate Cranberry Oatmeal Cookies

½ cup butter, softened
¾ cup brown sugar
1 large egg
1-2 teaspoons vanilla extract
1 cup flour (I use GF but regular works too!)
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
1 ½ cups rolled oats (I use GF but regular works too!)
¾ cup dried cranberries (such as Craisins)
¾ cup white chocolate chips

Preheat oven to 350 degrees.

In the bowl of a stand mixer or large bowl, mix the butter and brown sugar until smooth. Add the egg and vanilla, and mix until well blended, scraping the sides as needed.

Add the flour, baking soda, salt and cinnamon, and mix well until all the ingredients are fully incorporated.

Add the oats, cranberries, and white chocolate chips. Mix well again.

Place 1-2 tablespoon balls of the dough on a baking sheet lined with a silicone liner or parchment paper.

Baking for 10-12 minutes or until just slightly brown on the edges. Let cool for 5-10 minutes before transferring to a wire rack for cooling.

Makes 2-3 dozen cookies, depending on the size of your cookies. :)
