Roasted Broccoli

Something magical happens when you roast vegetables. This recipe builds upon the yumminess of roasted broccoli with the deliciousness of roasted garlic and onions. Not a garlic fan? Reduce or omit…but maybe give it a quick try before you write it off, because roasted garlic is sublime!

(So much better than just) Roasted Broccoli

2 heads of broccoli
5-6+ cloves of garlic, peeled
1 onion
1-2 tablespoons extra virgin olive oil (EVOO)
1/2 teaspoon salt
1/2 teaspoon pepper
A few tablespoons grated Parmesan cheese
Optional for serving: balsamic vinegar


Preheat oven to 425 degrees.

Cut broccoli into bite-sized pieces. Add the garlic, onion, EVOO, salt, and pepper. Mix well and place on a baking sheet.

Roast for 20-30 minutes or until tender and the broccoli is a bit browned.

Push into a pile on the baking sheet and grate Parmesan cheese on top.

Add a few dashes of balsamic before eating, if desired.

Serves 4-6.
