Pumpkin Apple Breakfast Cookies

1/3 cup pumpkin puree
2/3 cup applesauce
1/2 cup almond butter
2 teaspoons pumpkin pie spice or cinnamon
1/2 teaspoon vanilla extract
1/4 cup+ brown sugar*
1/2 medium apple, diced
2 1/2 cups rolled oats, GF if needed

Preheat oven to 350 degrees.

In a bowl combine pumpkin puree through brown sugar.  Mix well.  (You might need to use a mixer to mix the almond butter into the rest of the ingredients).

Add the apple and oats, stir well to combine.

Place scoops on a baking sheet, press gently to flatten a bit (cookies won’t spread).

Bake 12-15 minutes.  Let cool well before removing from the baking sheet

Makes about two dozen cookies.

*if you are using unsweetened applesauce and almond butter, you may want to up the sugar a bit.  These are breakfast cookies, so they aren’t meant to be toooo sweet.  :)
