Modern Basil Succatash
Modern Succotash Salad
2 cups corn (frozen is fine–just thaw)
2 cups lima beans (frozen is fine–just thaw)
½ cup diced red onion
2-3 tablespoons thinly sliced basil
3 tablespoons rice wine vinegar
1 tablespoon extra virgin olive oil
½ teaspoon salt
In a large bowl, add the corn and lima beans.
Add the remaining ingredients, and stir very well to combine.
Can be served immediately or made the day before for extra flavor, just stir again before serving.
Serves 6-8 as a side
