Greek Zucchini
Greek Zucchini
2 medium to large zucchini, cut lengthwise and then into 1/2 inch slices
1 tablespoon extra virgin olive oil
1 clove garlic, chopped
1/4 teaspoon each salt and pepper
1 tablespoon fresh lemon juice
1 tablespoon minced fresh mint
2 tablespoons crumbled feta
Preheat oven to 450 degrees.
Place the zucchini in an oven safe dish or pan, and sprinkle with the oil, garlic, and salt and pepper. Stir to coat.
Roast for 20-30 minutes, or until zucchini is roasted to your liking (a little browning adds to the flavor).
Remove from oven and sprinkle with the lemon juice, mint, and feta. Stir and serve immediately.
Serves 2, but can easily be doubled or tripled.
