Gluten-Free Sourdough No-Knead Foccacia Recipe
No Knead Gluten Free Sourdough Foccacia
225 grams starter
355 grams GF flour (a blend that has Xanthan Gum in it)
450 grams room temperature water
12 grams salt
Cooking Spray
Olive oil and a bit more salt for baking
Mix all ingredients well. The dough will be wet, not shapeable.
Place in a 9x9 or slightly larger oven-safe dish, that has been coated with cooking spray.
Cover loosely with a clean kitchen towel or similar cover and place in a room temperature area to rise for 3-6 hours (I have been putting it in our oven with a light on since our home is a little cool in the winter–and pulling it out when I need to preheat the oven).
An hour before baking, preheat oven to 425 degrees.
Immediately before baking, gently dimple the top with your finger, if desired, drizzle with olive oil (a good tablespoon or two), and sprinkle with a bit more salt, and place, uncovered, in the oven.
Bake for 30-40 minutes, or until it reaches 205-210 degrees inside.
Now comes the hardest part–let fully cool to room temperature (a good 2 hours+) before slicing.
