Cantaloupe, Proscuitto and Mozzarella Salad

All the flavors of prosciutto wrapped melon in an easy-to-love fruit sweet and savory salad.

Cantaloupe, Prosciutto, and Mozzarella Salad

½ of a cantaloupe, peeled, seeded and diced
4 oz prosciutto diced
8 oz fresh mozzarella pearls or just diced
2 tablespoons thinly sliced fresh basil or mint
Juice of ½ lemon
2 tablespoons extra virgin olive oil
½ teaspoon salt
¼ teaspoon ground pepper

Combine all the ingredients in a bowl or storage container. Mix well to ensure good distribution of ingredients.

Can be served immediately or chilled and served within 1-2 days.

Serves 4-6 as a side.
