Super Easy Italian Beef
Slow Cooker Italian Beef
1 tablespoon olive oil
1 teaspoon salt and pepper
3-4 pound beef chuck roast
1 onion roughly chopped
2 cups beef broth
1-2 tablespoons balsamic vinegar
1 tablespoon Italian seasoning
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
¼ cup pepperoncini or banana peppers
Add the oil to a large saute pan, over medium-high heat. While the pan is heating, sprinkle the roast with salt and pepper, running it on all sides.
Place the roast in the pan, and allow to brown, 2-3 minutes per side until it has a good brown on most sides. While the roast is browning, add the onion too, to get some good browning on it as well.
While this is browning, mix the Italian seasoning, paprika, garlic, and onion powder. Set aside.
Place the roast and onions into your slow cooker. Pour the beef broth in your hot saute pan and scrape the bottom to get all the tasty bits loosened. Pour the liquid into the slow cooker, on top of the beef.
Pour the balsamic vinegar over the roast as well.
Sprinkle with the Italian seasoning mix and peppers.
Cook on HIGH for 5-6 hours, LOW 8-12.
Shred and top with balsamic and fresh peppers.
Serves 4-6.
