Slow Cooker Rotisserie Chicken

The simplest way to cook a whole chicken--in your slow cooker or crockpot.  And yes, technically this is not rotisserie chicken, but it tastes just as good!

Slow Cooker Rotisserie Chicken

1- 4ish pounds (about 3 ½ -5 pounds works) whole chicken
1 onion, quartered
1 tablespoon season salt  (or 2 teaspoons salt and 1 teaspoon pepper)
Optional:  fresh herbs

Place the onions in the slow cooker.  Rest the chicken on top, sprinkle seasoning on top.

If desired, place a few sprigs of fresh herbs on the sides.

Cook on high for 4-5 hours, low for 8-10 hours.

When ready to serve, remove the chicken (carefully--it can fall apart because it is so tender!) and place it on a broiler-safe pan.  Broil for a few minutes (keeping a close eye on it!) to brown and crisp the skin.

Serves 4-6.
