Slow Cooker Lemon Chicken Orzo Soup

2-3 cups chopped chicken
½ cup chopped celery
½ cup chopped or shredded carrots
1 medium onion chopped
4 cloves garlic, minced
2 bay leaves
1 teaspoon dried rosemary
1 teaspoon dried thyme
½ cup orzo (we like Barilla GF orzo)
¼ cup fresh squeezed lemon juice + more for serving (about 4 lemons worth)
6-8 cups chicken broth*
4 cups baby spinach, sliced thin
1 teaspoon salt
½ teaspoon ground pepper

Place all ingredients in a slow cooker. Cook on low for 6-8 hours, high for 3-4 hours.

Sprinkle with additional lemon juice and serve.

Serves 4-6.

*I use about 6 cups, and the soup is thicker. You can make it thinner with more broth.
