Slow Cooker Green Power Soup
There are at least four ingredients in this soup that can boost your health: turmeric, garlic, bone broth, and spinach. Throw in some jalapeno and other yummy ingredients and it’s why I call it Green Power Soup.
The best part? You throw all the ingredients in the slow cooker and let the ingredients work their magic.
Slow Cooker Green Power Soup
1 ½ -2 pound boneless, skinless chicken thighs
4-6 cups bone broth
4 cloves garlic, minced or one teaspoon garlic powder
1 tablespoon onion flakes
1 whole jalapeno, deseeded and stem removed–use ½ for soup, ½ for topping
6 oz baby spinach
1 4.5 oz can diced green chilis
1 teaspoon turmeric
1 teaspoon cumin
½ cup chopped fresh cilantro
½ cup salsa verde
1 teaspoon salt
½ teaspoon black pepper
Toppings: Sliced jalapeno, lime, avocado, sour cream, cheese, cilantro, chips
Place all ingredients in a slow cooker, taking note that the bone broth is a personal choice–4 cups will yield a thicker soup, 6 cups a thinner soup. I suggest starting with 4 cups and then seeing if you want to thin it a bit.
Cook on HIGH for 3-4 hours or LOW for 6-8 hours.
Remove the chicken. Puree the soup with an immersion blender, if desired (we do this).
Let the chicken cool a bit, shred, and then return to the slow cooker.
Serve with desired toppings.
