Gluten-Free Peach Crisp

4 peaches, peeled and diced
2-3 tablespoons brown sugar or sweetener
1 ½ tablespoons cornstarch
1 ½ cups gluten-free granola (such as Safe and Fair Granola)
2 tablespoons butter or non-dairy spread such as Earth Balance

Preheat the oven to 350 degrees.

In a 9x9 or similarly sized glass baking dish, add the peaches, sugar, and cornstarch.  Mix well until the peaches are coated.

Sprinkle with granola on top, and then drop little dollops of butter or Earth Balance on top.

Bake for 30-40 minutes or until the peaches are bubbly.  Let sit for 5-10 minutes or can be served a room temperature, with or without a scoop of vanilla ice cream.

Serves 8.
