High Protein Double Chocolate Monster Cookies (GF)

¼ cup butter, melted, or coconut or avocado oil
½ cup protein powder–chocolate or vanilla work great
½ cup brown sugar
2 teaspoons vanilla extract
2 large eggs
1 cup creamy peanut butter
1 ½ cups oats (gluten-free if GF is needed)
1 teaspoon baking soda
½ teaspoon salt
⅓ cup cocoa powder
½ cup chocolate-coated candies (such as M&M’s)
½ cup chocolate chips

Preheat oven to 350 degrees.

In a large bowl combine the butter, protein powder, brown sugar vanilla extract, eggs, and peanut butter. Stir until very well combined.

Add the oats, baking soda, salt, and cocoa powder and stir together again until very well combined.

Add the chocolate-coated candies and chocolate chips and again stir well until combined.

Line a large baking sheet with parchment paper or a silicone baking mat, and scoop the dough in heaping 2-3 tablespoon balls on the sheet. 

Press down slightly to flatten a bit, and bake until the edges are set, about 10 to 12 minutes

Cool for about 10 minutes, and press a couple more candies into the top of each cookie if desired.

Makes about 14 to 16 cookies.
