Cucumber Mango Salsa
Cucumber Mango Salsa
1 large or 2 small/medium cucumbers, diced
1 mango, diced
¼ cup red onion, minced
¼ cup cilantro, minced
½ jalapeno, minced
2-3 tablespoons lemon or lime juice
½ teaspoon salt
In a large bowl, combine all ingredients. Tastes best if it sits 3-4 hour before serving, or up to one day ahead of time.
Makes about 2-3 cups of salsa.
