Chipotle Lime Chicken Tostadas

1 tablespoon extra virgin olive oil 
1 pound ground chicken (or turkey)
1/4 cup Greek yogurt
1 tablespoon lime juice
2 tablespoons salsa verse
2 tablespoons chopped cilantro (optional)
1 chipotle pepper (from canned chipotles in adobo sauce)
1 tablespoon honey
1 tablespoon taco seasoning
1 - 15 oz can refried beans
2 cups shredded Colby Jack cheese
8 tostadas

Optional toppings:
Guacamole
Diced tomato
Diced green or red onion
Fresh cilantro
Shredded coleslaw
Jalapeno
Sour Cream

Preheat oven to 35O. In a saute pan over medium-low  heat, add the olive oil and then the chicken. 

While the chicken is cooking blend the yogurt through honey until smooth.  

Once the chicken is cooked, reduce the heat to simmer and add the sauce, then the taco seasoning, and stir and cook for 1-2 minutes until sauce is well incorporated.

Arrange tostadas on a baking sheet.  Top however you desire—typically a couple tablespoons refried beans, then chicken and cheese. 

Bake 8-10 or until cheese is melted and looks a little toasty. 

Top with desired toppings!

Serves 4.
