Sesame Salad
Half green salad, half pasta salad, this recipe can lean either way and either way you make it it’s delish!
Sesame Salad
1 pound of gnocchi (I used cauliflower gnocchi)
5-8 oz boxed salad –I used spinach and arugula, but mix it up!
1/3 cup sesame, olive or coconut oil
¼ cup sesame seeds
⅓ cup soy sauce or coconut aminos
⅓ cup rice wine vinegar
1-2 tablespoons honey
1 tablespoon sriracha (optional)--if you want to omit, add ½ teaspoon black pepper
Optional: Shrimp, chicken, sliced cucumbers, bell peppers or red onion
Cook the gnocchi according to package instructions.
While the gnocchi is cooking, place the greens in a large bowl, chopping them if you wish.
Also while the gnocchi is cooking, heat the oil in a small saute pan. Add the sesame seeds and cook for 1-2 minutes or just until the sesame seeds begin to brown (watch them closely because they go from toasted to burned quickly!).
Remove from heat and add the content to a bowl with the soy sauce/coconut aminos, rice wine vinegar, honey and sriracha. Stir well.
Add the gnocchi to the greens and then the dressing. Toss well.
Add any additional toppings you desire: chicken, veggies or the like.
Serve in the ratio that works for you: I like it heavy on the greens, my boys enjoy it with plenty of gnocchi.
