BBQ Chicken Chopped Salad with BBQ Ranch
Use any leftover grilled chicken for this fresh salad idea!
BBQ Chicken Chopped Salad with BBQ Ranch
6-8 cups chopped lettuce
1 cup chopped bell pepper
1 cup corn
1 cup black beans
1 ½ cups shredded colby jack or cheddar cheese
½ cup diced red onion
½ cup chopped cilantro
2 cups diced BBQ or any type of grilled chicken
1 avocado, diced
2 tablespoons BBQ sauce
½ cup ranch dressing
Optional: crushed tortilla chips, pepitas, or cornbread
In a large bowl combine the lettuce, pepper, corn, black beans, cheese, red onion, cilantro, chicken, and avocado.
In a small bowl mix the BBQ and ranch, and stir well.
Toss the salad ingredients together, and then serve with the BBQ Ranch dressing. Top with desired optional toppings.
Serves 4-6.
