5 Ingredient Key Lime Bars (GF)

My husband and younger son went to the Florida Keys for a Scouting High Adventure trip last summer. To welcome them home, I made these quick and easy Key Lime Bars. To be honest, I made them with plain ole’ regular limes, but I didn’t hear any complaints!

5 Ingredient Quick & Easy Key Lime Bars (Gluten-Free)

36 Gluten-Free Ginger Snaps
1/2 cup butter (1 stick)
1 - 14oz can sweetened condensed milk
3 egg yolks
8 limes, zested and juiced

  1. Preheat oven to 350 degrees.

  2. Place the ginger snaps and butter in a food processor and process until it resembles wet sand. Press into a 9x9 or 8x8 glass square dish.

  3. Bake for 10 minutes.

  4. While baking, zest, and juice the limes until you have about 1-2 tablespoons of zest and 1/2 cup juice.

  5. Beat the egg yolks and then add the condensed milk. Add the lime zest and juice. Mix well.

  6. Pour lime mixture over the ginger snaps base and bake for 15 minutes.

Makes 12 squares of goodness.
