Warm Lemon Herb Olives and Cheese

1 tablespoon or so extra virgin olive oil
½ lemon, cut into wedges (seeds removed)
5-10 whole garlic cloves
8-12 oz olives (such as kalamata, castelvetrano, pitted)
A few sprigs rosemary and/or thyme*
8 oz cubed feta or halloumi cheese
Optional:  cherry tomatoes

Preheat oven to 400 degrees.

In an oven-safe dish, drizzle the olive oil.  Then, add the lemon and garlic cloves, mixing a bit to coat in the olive oil.

Bake for 20 minutes or until slightly browned.

Remove from the oven, and add the remaining ingredients.

*You may use ½ teaspoon each dried rosemary and thyme in lieu of fresh sprigs.

Bake for another 10 minutes.  Serve warm, with baguette if you desire.
